Crostini- toasted

hummus

cucumber

orange reduction

Extra virgin olive oil

Pomegranate

microgreens


Instructions

  • Preheat & Prep: Preheat oven to 375°F (190°C). Slice a baguette into ½-inch thick slices.
  • Toast the Crostini: Brush slices with extra virgin olive oil, season lightly with salt, and toast in the oven for 8-10 minutes until golden and crisp.
  • Make the Orange Reduction: In a small saucepan, simmer fresh orange juice over medium heat until reduced by half and slightly syrupy. Set aside to cool.
  • Prepare the toppings: Mix small-diced cucumber with freshly cracked pomegranate seeds. Drizzle with a touch of olive oil and season with salt and freshly cracked black pepper.
  • Assemble: Spread a layer of hummus on each toasted crostini.
  • Top: Spoon the cucumber-pomegranate mixture over the hummus.
  • Drizzle: Finish with the cooled orange reduction and a final drizzle of extra virgin olive oil. Serve and enjoy!
