Ingredients

Scale

300g Sweet chili sauce

1440g Mirin

16g Korean dried chili

80g Sesame seeds

48g Chili oil

320g Sake

114g Yamasa soy sauce

Chicken wings

.5 each lime

1tsp Sancho salt


Instructions

  1. Combine all ingredients except chicken, lime and Sancho salt. This will be the basting marinade.
  2. Clean chicken with baking soda and water.
  3. Deep or pan fry chicken wings.
  4. When internal temp is 165 or golden brown, coat chicken with sauce.
  5. Finish in the broiler or air fryer until dark golden brown.
