This exquisite amuse-bouche is a perfect balance of creamy, tropical, and refreshing flavors, designed to awaken the palate.

At the base, rich and velvety coconut Greek yogurt provides a luscious, slightly tangy foundation with a subtle hint of nuttiness. On top, a house-made papaya jam adds a layer of tropical sweetness, its silky texture and sun-ripened fruitiness offering a delightful contrast to the yogurt’s creaminess. Finally, a vibrant garnish of fresh seasonal berries—perhaps juicy strawberries, tart raspberries, or plump blueberries—introduces a burst of color and a refreshing, slightly acidic finish.

Each bite delivers a harmonious blend of textures and flavors, from the cool silkiness of the yogurt to the bright fruit-forward notes of the jam and berries. This amuse-bouche is not only a delightful first taste but also a beautifully balanced introduction to a refined dining experience.


Ingredients

Scale

1 Fresh papaya

1 Cup granulated sugar

Garnish (seasonal berries of choice)

1 Cup greek yogurt

4 Tbsp Coco real cream of coconut drink mix


Instructions

  1. Clean and seed papaya. Place into a sauce pot.
  2. Add 1 cup of water and sugar. Bring to a boil then reduce heat. Occasionally stir to eliminate burning.
  3. After about 20 minutes, take papaya and blend with hand blender. Set aside.
  4. Mix greek yogurt and coconut.
  5. Place yogurt at the bottom of glass then add papaya jam.
  6. Wash fruits and garnish. Enjoy!

*If you left the papaya jam sit overnight it will be more stable. Provides better consistency.*
