Lemongrass Rhubarb Soda

A refreshing and effervescent blend of tart rhubarb and delicate rose, this handcrafted soda offers a perfect balance of bright acidity and floral sweetness. Lightly carbonated for a crisp finish, each sip delivers a unique harmony of vibrant fruit and botanical elegance, making it a delightful and aromatic treat.


Ingredients

Scale

5 cups of fresh rhubarb

1 tsp lemongrass syrup (2 lemongrass stalks, sugar and water)

1 cup granulated sugar

3 cups water

2 Tbsp dried rose petals

1 cup freshly squeezed, lemon juice

1 egg white (per drink)

Rose petals (garnish)


Instructions

1. In a pot combined rhubarb, sugar, water and dried rose petals. Bring to a boil.

2. Reduce the heat and simmer for 20 minutes. Pour through a shinwa (strainer) to remove the rhubarb pulp.

3. Add the lemon juice, lemongrass syrup and stir until combined. Store in airtight container.

4. When ready to serve, place ice, one egg white and 1/2 cup of the syrup into a shaker or mason jar. Shake until frothy.(it should foam)

5. Pour into glass of choice through a metal sieve. Enjoy!
