  • ½ cup mayonnaise (or Greek yogurt for a lighter version)

  • ¼ cup grated Parmesan cheese

  • 2 tbsp fresh lemon juice

  • 2 tsp Dijon mustard

  • 2 tsp Worcestershire sauce

  • 2 garlic cloves, minced

  • 2 anchovy fillets, finely minced (or 1 tsp anchovy paste)

  • ½ tsp salt (or to taste)

  • ½ tsp black pepper

  • ¼ cup extra virgin olive oil


Instructions

Mix the base – In a bowl, whisk together the mayonnaise, Parmesan, lemon juice, Dijon mustard, Worcestershire sauce, minced garlic, and anchovies until smooth.

Slowly incorporate olive oil – While whisking continuously, slowly drizzle in the olive oil to emulsify the dressing.

Season to taste – Add salt and black pepper, adjusting as needed.

Chill & serve – Let the dressing sit for at least 10 minutes to allow the flavors to meld.
